Mastelo of Sifnos
- 6-5 Kgs of meat, preferable lamb or kid in portions
- red wine
- Salt and pepper
Leave the meat in red wine. Put salt and pepper and sprinkle with dill. Put in the mastelo, which is a clay pot without lid, the twigs, so that the meat will not be stuck on the pot, and on top of that place the meat cut into portions. Pour in the wine, cover with aluminum foil, make a few holes with a fork on the foil and bake in a the wooden oven for about 5 hours. Bake in electric oven at the beginning in higher and afterwards in lower temperature, putting oil paper on its top.
