Traditional Recipes from Sifnos

In the island of Tselementes, could not recipes be nothing but delicious and special, since the island is famous for its gastronomy.

We recommend some of them, which we learned from people who love tradition and taste.

Mastelo of Sifnos

Ingredients

  • 6-5 Kgs of meat, preferable lamb or kid in portions
  • red wine
  • Dill
  • Salt and pepper
  • Twigs
  • Foil

Execution

Leave the meat in red wine. Put salt and pepper and sprinkle with dill. Put in the mastelo, which is a clay pot without lid, the twigs, so that the meat will not be stuck on the pot, and on top of that place the meat cut into portions. Pour in the wine, cover with aluminum foil, make a few holes with a fork on the foil and bake in a the wooden oven for about 5 hours. Bake in electric oven at the beginning in higher and afterwards in lower temperature, putting oil paper on its top.

Chickpea soup of Sifnos

Ingredients

  • 1 kg of chickpeas
  • 1 tablespoon baking soda
  • chopped onion
  • Olive oil
  • Salt and pepper
  • Water
  • Lemon

Execution

Put the chickpeas in water by evening. In the morning pour the baking soda, let another half hour pass and then rinse them thoroughly, put them in a clay pot, if you do not have a clay one, just use a simple pot, and add the onion, oil, salt, pepper and water to cover beans. In the island they bake the food bake in wooden over all night! In an electric oven cook about 6 hours at moderate temperature.

Sifnian caper salad (spread)

Ingredients

  • Dry capers
  • Oil
  • Onions
  • Water
  • Bay leaves
  • Salt and pepper
  • Vinegar

Execution

Soak the capers in the evening. The next day throw the water and rinse them thoroughly, to remove the bitterness, changing the water twice or three times. Then boil to soften. In a frying pan put onions, about 4 times the amount of capers, olive oil and add the capers. Add the oil, a little water, the laurel and let it simmer. In the end we put the vinegar, preferably from old red wine. Let the caper salad puslpify and it is ready.
